How it all started…

My name is Wafaa and I’m a Lebanese PhD student, living in France, with a passion for food and cooking.

Beyond Tabbouleh is a project that aims to share my food journey.

I’ve always been told by friends and family that I both cook well and know where/what to eat. They are also the ones who encouraged me to share my cooking/knowledge with others.

Also, since I moved to France, I learned that people here have a great misconception of what Lebanese food really is. It was especially a shock for me to see that what is known here as “Lebanese Tabbouleh” has nothing to do with the actual Lebanese tabbouleh we make in Lebanon. It’s more like a semolina based mix with some herbs that barely show, peppers, zucchini and all sorts of weird ingredients like chicken and tuna.

Not even close to what a Lebanese tabbouleh is. They butchered it really.

Since then I have been on a quest to teach the French people what the Lebanese cuisine is all about, hence the origin of the name.

But don’t get me wrong I cook food from all over the world! Not just Lebanese food.

My goal from this blog is to actually share my food preferences and recipes. It’s my way of keeping track of my recipes and sharing them with people. It’s also my way of sharing some food reviews of places I’ve been to.

I usually try to make my recipes as easy for people to make as possible. So hopefully this blog will be my platform to share my food with a wider audience than usual.
