Zucchinis with Eggs (Koussa Aa Beid)

It is a tradition in our household to always make some “Koussa 3a Beid” whenever we have some left over zucchinis (or the insides left from making stuffed zucchini). It’s partly because we don’t like wasting food, and partly because this recipe is so easy, simple and tasty.

Ingredients

You will be needing the following ingredients:

  • Diced Zucchinis (or the insides of zucchinis that are left over from making stuffed zucchini)
  • Eggs
  • Oil or butter
  • Cinnamon
  • Salt and Pepper to taste

Some optional ingredients:

  • Onions, finely chopped
  • Garlic, finely chopped
  • Cheese, grated

Tools

  • Pan or wok

Notes

Ingredients measures are based on your liking. You can play with the ratios to adjust them to your taste.

Instructions

1- In a pan, on medium heat, sweat the zucchinis in order for them to release all their moisture. This may take a while, so stir them occasionally until you feel that they dried out.

2- Add soil oil/butter, onions and/or garlic. Then sautee them until soft.

3- Add the eggs and the spices, then mix everything together. Let the eggs cook and optionally add cheese on top.

4- When the eggs are cooked, sprinkle some cinnamon on top and serve.

Serving Suggestions

Best served with some Lebanese bread (I prefer markouk bread) and some vegetables on the side.
