Lazy Cake
Otherwise known as “Biscuit au chocolat” in French, is an easy-to-make dessert that requires only a few ingredients.
There are many ways of making this dessert but here I will be sharing my favorite recipe.
Difficulty: Easy
Cooking Time: 10 mns (preparation time) & 3+ hours in the fridge/freezer
Ingredients
You will be needing the following ingredients:
- Digestive biscuits (1 pack)
- Cocoa Powder (3 tablespoons)
- Condensed Milk (around 300 grams)
Some optional ingredients:
- Raisins
- Coconut flakes
- 50 g of butter
Tools
- Loaf pan
- Bowl
- Cling film
- Cooking glove
Notes
You can use any sweet biscuits of your choosing: digestive, graham crackers, etc.
Usually, you would be adding butter as well, around 50 grams for every biscuit pack. However, I have come to achieve the same result without the use of butter. The secret is in breaking half of the biscuits enough so that they become a powder that will bind well with the condensed milk.
I like to make this recipe entirely by hand so I generally wear gloves.
Instructions
1- In a bowl, break the biscuits with your hands. At least half of them should be finely turned into powder and the rest should be in small pieces.
2- Add the cocoa powder to the biscuits and mix them until well combined.
3- Add the condensed milk over several batches, while mixing everything together to create a homogeneous and firm dough. Once you feel like everything is binding together then you have enough condensed milk. If you add too much condensed milk, the cake wonβt be firm after freezing.
4- Prepare the loaf pan by adding a long piece of cling film to it. The cling film should wrap the cake at the end. Place the lazy cake mixture over the cling film, by making sure to press firmly on it for it to take the desired shape.
5- Place the pan in the fridge (or freezer) for at least 3 hours or overnight. Once firm, it is ready to serve.
